Instructions
  1. 1) Chop watermelon and jicama into sticks
  2. 2) Chop jalapeño and scallions and mix with watermelon and jicama.
  3. 3) Mix lime juice, cilantro, and sea salt in a small bowl, and then use to dress watermelon jicama mixture.
  4. 4) Pair with your favorite lean protein and enjoy!

Ingredients:

  • 24 oz seedless watermelon, cut into 2 ½ x-½ inch sticks
  • 16 oz jicama, peeled, cut into 21/2 x ½-inch sticks (Trader Joe’s sells these pre-sliced)
  • 1 jalapeño, minced
  • 1 scallion (white and pale-green parts only), thinly sliced
  • ½ cup chopped cilantro
  • 3 tbsp fresh lime juice
  • Sea salt to taste
